     Title: CHOCOLATE COVERED CHERRIES (PARTY COOKING)

     Yield: 30 Servings

     1    (7 1/4 oz.) pk vanilla wafer
          (finely crushed
   1/2 c  Powdered sugar
   1/2 c  Chopped walnuts
   1/4 c  Boiling water
     2 tb Butter
     1 tb Light corn syrup
     2 ts Instant powdered coffee
    30    Maraschino cherries with ste
    12 oz Chocolate chips
          Optional:
          Flaked coconut
          Sprinkles
          Chopped nuts

   Mix wafer crumbs, powdered sugar and nuts. Combine water, butter, corn
 syrup and coffee. Add to first mixture. Shape approximately 1/2 Tablespoon
 mixture around each cherry. Cover and refrigerate at least one hour.
    Melt chocolate in microwave (or in double boiler). Holding stem, dip
 coated cherries in chocolate, covering completely. Place on wire rack over
 wax paper. After 5 minutes, garnish with optional sprinkles if desired.
 Refrigerate until chocolate has hardened.
  Yield: 2 1/2 dozen. Lynn Herrick
