     Title: CANDIED FRUIT PEELS

          Water
          Sugar

 Save peels from citrus fruits in as large pieces as possible. Boil 15-45
 minutes, depending on thickness of peel; let cool. Use the edge of a spoon
 to scrape off ALL of the white part, leaving only the colored zest. Discard
 water or save for potpourri.

 Bring water and sugar to a boil.  Keep adding sugar until you have a thick
 syrup.  Add prepared fruit peels and simmer 30 minutes. Remove from syrup
 and dip both sides in sugar. Dry overnight on waxed paper.

 This was an early American treat, easy to make today. Save a bunch of
 citrus peels and have the kids do the scraping. Candied peels can be eaten
 as a candy or used in cooking.

 When dry, store in layers in airtight container, separated by wax paper.
 Will keep for months.
