     Title: MAPLE BRITTLE

     Yield: 1 Servings

     3 c  Maple sugar
     1 c  Cold water
     1 c  Molasses
     1 tb Maple syrup
       pn Cream of tartar
   1/2 c  Butter
     2 ts Baking soda
     1 tb Boiling water
     1 ts Lemon extract
     1 c  Brazil-nut meats

   Cook the sugar, water, malasses, syrup and cream of tartar to 300 F, or
 to the hard-crack stage. Add the butter, boil for 4 minutes, then remove
 from heat. Add the soda dissolved in boiling water and the lemon extract.
 As soon as the mixture begins to foam, pour out in buttered platters,
 spreading very thin. Sprinkle with the chopped nuts.
