     Title: White Chocolate Truffles

     Yield: 24 servings

     8 oz White chocolate (do not use
          -compound coating)
    48    Perfect walnut or pecan
          -halves
     6 tb Unsalted butter at room
          -temperature
 1 1/2 tb Water
     1    Grade a large egg yolk

   Preheat oven to 300F.  Set aside a wax paper-lined baking sheet.

   Chop the white chocolate into small pieces and set aside. Toast the nuts
