MMMMM------------------------SWEET ROLLS-----------------------------
1 c Whole milk; warm (110 F/43 C)
1/4 oz Env active dry yeast
2 tb Granulated sugar
3 tb Unsalted butter; room temperature
1 lg Egg
3 c A-P flour; more for rolling
1 ts Kosher salt
MMMMM--------------------------FILLING-------------------------------
1 c Frozen blueberries
1/4 c Granulated sugar
1 tb Corn starch
MMMMM------------------------LEMON GLAZE-----------------------------
1 Lemon; grated zest of
3 tb Fresh lemon juice
1 tb Unsalted butter; melted
1 3/4 c Powdered sugar
1 pn Kosher salt
Prepare the Dough:
Combine warm milk, yeast, and sugar. Let it sit until foamy. Add
butter, egg, flour, and salt. Knead until smooth and let it rise
for about an hour.
Make the Filling:
Mix blueberries, sugar, and corn starch.
Assemble the Rolls:
Roll out the dough, spread the blueberry filling, and roll it up.
Cut into rolls and place in a baking dish. Let them rise again.
Bake @ 350 F/175 C until golden brown.
Make the Glaze:
Mix lemon zest, lemon juice, melted butter, powdered sugar, and
salt. Drizzle over the warm rolls.
