2 tb Yeast
2 ts Salt
2 c Water; warm, (110 F)
1 Egg
1/2 c Sugar
6 1/2 c Flour; up to 7 c
1/4 c Shortening

1 lb Powdered sugar
1/2 c Milk
4 ts Mapline flavor; (maple
-extract)

Dissolve the yeast in a with warm water. Add the sugar, salt, and 1/2
the flour. Beat 2 minutes with mixer. Add egg and shortening.
Stir in half of remaining flour with a wooden spoon and mix well.
When the mixture has formed a ball and breaks away from the sides of
the bowl, roll it out on a floured board and dust lightly with flour.
Knead until the dough is smooth and elastic, approximately 10 minutes.
Place the dough in a greased bowl and turn to coat the surface. Cover
the bowl and set it in a warm, draft-free place to rise until doubled
in bulk, about 1 to 2 hours.
Punch down dough with the fist and knead gently about 3 minutes. Roll
out the dough on a lightly floured surface to a 15x9-inch rectangle
about 3/4 inch thick. Cut into pieces about 1 1/2 inches wide and 3
inches long. Transfer to another board or cookie sheet to rise in a
warm place until almost double.
Deep fry several at a time in a heavy pan with 4 inches of oil heated
to 375 F, turning to brown each side. Drain on absorbent paper, and
frost with mapline frosting.
Mix frosting ingredients together and spread on maple bars.
