                             Linsen Pastry

 Amount  Measure       Ingredient -- Preparation Method

  1      Lb            Butter
  1 1/2  C             Sugar
  6                    Egg Yolks
  5 1/2  C             Flour
  1      Pinch         Salt
  2      Tsp           Vanilla Extract
  2      Tsp           Lemon Rind -- grated

Mix like any pastry. Add all ingredients in bowl. Cut butter into mixture
to make a dough. Roll it out and cut into any shape.

Fill with jams, jellys or nut fillings, or top with egg whites beaten
stiff.

I normally make these into small filled pasteries. I fill them with red
raspberry jam or poppy seed filling, but I think they would be exceptional
filled with your peach pie filling!
