1 1/4 c All-purpose flour
1 tb Baking powder
1/4 ts Salt
2 1/2 c Raisin Bran cereal
1 c Milk
1/3 c Honey
1 Egg
3 tb Vegetable oil
Stir together flour, baking powder and salt. Set aside
In large mixing bowl, stir together raisin bran cereal, milk and
honey. Let stand 1 to 2 minutes or until cereal is softened. Add
egg and oil. Beat well.
Add flour mixture, stirring only until combined. Portion batter
evenly into 12 greased 2-1/2" muffin pan cups.
Bake at 400 degrees F for 18 to 20 minutes or until lightly
browned.
Serve warm.
