                       Zucchini Muffins

  2 1/2  c             Self rising flour *
  1      ts            Cinnamon
  2                    Eggs
  1 1/4  c             Sugar
    3/4  c             Oil -- +2 ts
  2 1/2  c             Zucchini -- grated
  2      ts            Vanilla
  1      ts            Butmeg (optional)

* (if using all purpose flour, add 1 ts salt, 1 ts baking powder, &
 1 ts baking soda)

Mix flour with cinnamon (and nutmeg). Mix in sugar. Add wet
ingredients (eggs, oil, vanilla, zucs) and mix until just combined.
Spoon into prepared muffin pans.

Bake at 350 F for 15 minutes or until done.

Makes 24 muffins.

Note: Freeze up grated zucchini to use in this recipe.
