MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Gluten-Free Cornbread Muffins
Categories: Muffins
     Yield: 12 Muffins

 1 1/4 c  Corn flour
   3/4 c  Corn meal
   1/4 c  Brown sugar
     1 tb Baking powder
     1 ts Salt
     2 lg Eggs
     2 tb Flax seed meal
     1 c  Milk
   1/2 c  Melted butter

 Preheat the oven to 350 F.

 Line a muffin pan with 12 paper liners.

 In a medium bowl, break up the eggs with a whisk. Whisk in the milk.
 Set aside.

 In a large bowl, mix together the dry ingredients. Add the milk
 mixture and melted butter. Whisk until just blended. It's OK if there
 are a few lumps.

 Spoon the batter evenly into the prepared muffin pan, filling each cup
 about 3/4 full. Bake for 20-30 minutes, or until the tops are set and
 golden. (Note that the muffins will not dome.)

 Cool the muffins for a few minutes in the pan, then serve warm.
