1 Pie shell (9"); baked
3 c Strawberries; hulled, washed,
- and drained
1 c Water
3/4 c Sugar
2 tb Corn starch
1 tb Butter
Fill pie shell with 2 cups of choice berries. Crush remaining (1 cup)
berries. Soak berries with water 5 minutes, strain and reserve 1 cup
juice. Combine sugar and corn starch; stir into berry juice and cook
3 minutes or until thick and clear. Add butter. Cool slightly and
pour over fruit to glaze berries in pie shell. Chill. Garnish with
whipped cream and strawberries, if desired.
* A few drops red food coloring can be added to syrup for extra
color, if desired.
