Title: Raisin Pie

Yield: 6 Servings
2 c Raisins
1 tb Flour
1 tb Corn starch
1 c Brown sugar
1 ts Lemon juice
1 Pastry shell with top
Cover raisins with water and cook for 45 min. Mix corn starch and
flour together with a bit of water to make a smooth paste and add
to the cooked raisins. Add lemon juice and brown sugar and stir
into the raisins. Pour entire mixture into a pie shell and cover
with pastry dough. Bake in oven at 400 F and then reduce the
temperature to 350 F. Serve hot with a scoop of ice cream.

My Mom also used grated lemon rind.
Some people add a little butter to enrich the pie filling,
Raisin pie was traditionally served along with other desserts at
the meals following country funerals, especially in the Mennonite
and Hutterite communities.
