     Title: Apple-Honey Custard Pie

     Yield: 6 Servings

     1    Pie shell; (9"); unbaked
     2 c  Apples; peeled & sliced;
          -(any kind but red
          -delicious) -OR-
     2 c  Fresh peaches; sliced -OR-
     2 c  Fresh black cherries; pitted
          -& halved
     4 lg Eggs
   3/4 c  Honey or maple syrup
     1 c  Yogurt
     1 ts Vanilla
   1/2 ts Cinnamon
   1/4 ts Salt
     1    Handful of chopped nuts;
          -(optional topping)

 Easy and wonderful pie.

 Pre-heat oven to 375 F.

 Spread apple slices evenly over pie shell. Combine remaining
 ingredients in the blender, and run at high speed for several
 seconds. Pour custard over apples. Sprinkle on some nuts (walnuts or
 almonds recommended), if desired. Bake 45 minutes, or until solid
 when jiggled. Cool at least to room temperature before cutting.
