     Title: Lemon Yogurt Cookies

     Yield: 48 servings

   1/2 c  Margarine; (1 stick)
          -softened
 1 1/4 c  Granulated sugar
   1/2 c  Plain nonfat yogurt or
          -low-fat
          Lemon-flavored yogurt
     2    Egg whites
     1 tb Grated lemon peel
   1/2 ts Vanilla
     2 c  Quick or old-fashioned
          -rolled oats
          ; uncooked
 1 1/2 c  All-purpose flour
     1 ts Baking powder
   1/2 ts Baking soda
          Nonstick cooking spray
   1/4 c  Powdered sugar

 Recipe by: St. Louis Post-Dispatch 11/30/96 Beat margarine and granulated
 sugar until fluffy. Add yogurt, egg whites, lemon peel and vanilla; mix
 until well blended. Combine oats, flour, baking powder and baking soda.
 Gradually add dry ingredients to margarine mixture; mix well. Cover;
 refrigerate for 1 to 3 hours.

 Preheat oven to 375 degrees. Lightly coat cookie sheet with nonstick
 cooking spray or oil lightly.

 With lightly floured hands, shape dough into 1-inch balls. Place on
 prepared cookie sheet. Using bottom of glass dipped in granulated sugar,
 press dough into 1/8-inch-thick circles. Bake 10 to 12 minutes or until
 edges are lightly browned. Let cool 2 minutes on cookie sheet; remove to
 wire rack. Sift powdered sugar over warm cookies. Let cook completely.
 Store tightly covered.

 Yield: About 4 dozen cookies. Recipe is from Quaker Oats.
