Title: Dipped Peanut Butter Sandwich Cookies

Yield: 18 Cookies
1/2 c Creamy peanut butter
4 oz Ritz crackers (1 sleeve)
1 c White chocolate chips, or
Semisweet chocolate chips, or
Milk chocolate chips
1 tb Shortening
Preparation time: 2 hours
Spread peanut butter on half of the crackers; top with remaining
crackers to make sandwiches. Refrigerate. In a double boiler over
simmering water melt choice of chocolate chips and shortening,
stirring until smooth. Dip sandwiches and place on waxed paper
until chocolate hardens.

part white chocolate dipped.
