     Title: Crunchy Potato Chip Sugar Cookies

     Yield: 1 servings

     2    Unsalted butter; softened
   1/2 c  Sugar
   3/4 ts Salt
     2 ts Vanilla extract
   1/2 c  Chopped toasted pecans
   1/2 c  Crushed potato chips
     2 c  All-purpose flour
          Granulated sugar
          For dipping cookies
          Melted semisweet chocolate
          For drizzling

     Preheat oven to 350 degrees F. Line cookie sheet with parchment paper.
 Cream together butter and sugar until light and fluffy. Beat in salt and
 vanilla. Add pecans and potato chips. Mix well. Using wooden spoon, stir in
 flour just until mixed. Roll batter into balls about the size of a large
 walnut and place on cookie sheet. Leave plenty of room for spreading. Coat
 bottom of glass with butter and then dip in sugar. Press and twist to
 flatten each ball into 3 inch circle.
     Bake 8-10 minutes or until edges turn lightly golden brown. Cool on
 racks. Drizzle cooled cookies with melted chocolate. Refrigerate to set.
