Title: Suttie's Cookies
Categories: Cookies
Yield: 15 Cookies
1/2 c Brown sugar
1/2 c Butter
1 c Whole wheat flour
1 1/2 c Soft rolled oats
1 ts Honey
1 tb Water; warm
1/4 ts Baking soda
My grandmother's recipe.
Cream together the sugar and the butter. Add the flour and oats. Melt
the honey in a pan with the warm water and into this dissolve baking
soda. Mix this with the other ingredients until all ingredients are
well-blended. Roll a small piece of the mixture into a ball about the
size of a small egg. On a wooden board, squash it down as thinly as
possible. With a spatula, transfer the cookies to an oiled baking
tray. Bake them at 375 F for 10 minutes or until golden. Slide them
from the tray with the spatula and leave to crisp on a wire rack.
After 5 minutes you will have thin, crispy cookies.
Hazelnut Cookies:
Together with the oats and flour, add 1 cup hazelnuts, roasted and
finely ground. Add a little extra water to make the mixture
sufficiently damp.
