     Title: Sugared Shortbread
Categories: Five, Cookies, Snacks
     Yield: 18 servings

   240 g  (2 c) A-P flour
    36 g  (1/4 c) rice flour
    62 g  (1/4 c) sugar; more as
          - needed
     2 g  (1/2 ts) fine sea salt
    16 tb Unsalted butter; melted,
          - cooled

 Set oven @ 350 F/175 C.

 Line an 8" square pan with parchment paper.

 In a bowl, whisk together the flours, sugar and salt.
 Stir in the butter. Press dough evenly into the bottom
 of the prepared pan. Bake until golden brown, 40 to 45
 minutes. Sprinkle evenly with sugar while warm and
 slice; cool completely.
