Title: Swedish Coconut Cookies

3 1/2 c All-purpose flour
2 c Sugar
2 c Butter; softened
1 tb Baking powder
1 ts Baking soda
1 ts Vanilla
1 c Coconut; flaked
In large mixer bowl, combine flour, sugar, butter, baking powder,
baking soda, and vanilla. Beat at low speed, scraping bowl often,
until well mixed, 3-4 minutes. Stir in coconut. Divide dough into
halves; shape each half into a 12x2" roll. Wrap in waxed paper.
Refrigerate until firm, at least 2 hours.
Heat oven to 350 F. Cut rolls into 1/4" slices. Place 2" apart on
ungreased cookie sheets. Bake for 9 to 14 minutes, or until edges
are lightly browned. Cool slightly; remove.
