MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Pistachio Cookies

     Yield: 78 Servings

   1/2 c  Butter; softened
   1/2 c  Vegetable oil
   1/2 c  Confectioners' sugar
     2 lg Eggs; room temperature
     1 ts Almond extract
     1 dr Green food coloring;
          - up to 3 dr
     2 c  A-P flour
 3 3/8 oz Box instant pistachio
          - pudding mix
   1/2 ts Baking soda
   1/2 ts Cream of tartar
   1/8 ts Salt
   1/2 c  Chopped pistachios or
          - pecans
   1/2 c  Green colored sugar

 In a large bowl, beat the butter, oil and confectioners' sugar
 until blended (mixture will clump together). Add eggs, 1 at a time,
 beating well after each addition. Beat in extract and food coloring.

 Combine the flour, pudding mix, baking soda, cream of tarter, and
 salt; gradually add to creamed mixture. Stir in nuts. Cover and
 refrigerate for 1 hour. Set oven @ 375 F/190 C.

 Shape into 1" balls; roll in colored sugar. Place 2" apart on
 ungreased baking sheets. Bake for 7 to 9 minutes or until cookies
 are set. Cool for 1 minute before removing to wire racks. Store in
 an airtight container
