Title: Cranberry Nutella Sandwich Cookies

1 c Unsalted butter; softened
1 c Confectioners' sugar
3 ts Vanilla extract
2 1/4 c A-P flour
1/4 ts Salt
1/2 c Dried cranberries;
- fine chopped
1/4 c Milk
3/4 c Nutella
In a large bowl, cream butter and confectioners' sugar on high
until light and fluffy, 5 to 7 minutes. Beat in vanilla. In another
bowl, whisk flour and salt; gradually beat into creamed mixture.
Stir in cranberries. Divide dough in half. Shape each half into a
disk. Wrap and refrigerate 30 minutes or until firm enough to roll.
Set oven @ 325 F/165 C.
On a lightly floured surface, roll each portion of dough to 1/4"
thickness. Cut with a floured 2" diamond-shaped cookie cutter.
Place 2" apart on parchment-lined baking sheets. Brush with milk.
Bake until edges begin to brown, 18 to 20 minutes. Remove from pans
to wire racks to cool completely. Spread Nutella over bottoms of
half the cookies; top with remaining cookies. Store in an airtight
container.
