                   Pumpkin Chocolate Chip Cookies (2)

    1/2  c             Butter
  1      c             Pumpkin
  1      c             Sugar
  1                    Egg -- slightly beaten
  1      ts            Milk
  1      ts            Vanilla extract
  2      c             All purpose or unbleached flour
  2      ts            Baking powder
  1      ts            Cinnamon
    1/2  ts            Salt
  1      c             Chocolate chips
    1/2  c             Nuts (optional)

 Preheat the oven to 375 F (190 C).

 Place the butter or margarine in a heatproof glass dish. Cover and
 microwave on high power for 30 seconds.

 In a large bowl, mix together pumpkin, sugar, melted butter, beaten
 egg, milk, and vanilla extract.

 In a separate bowl, combine the flour, baking powder, baking soda,
 cinnamon, and salt. Add to the pumpkin mixture, and mix until smooth.

 Stir in the chocolate chips and, if you wish, nuts.

 Drop from a teaspoon onto a lightly greased baking sheet. Line up
 about 1-1/2" apart.

 Bake for ten to 12 minutes, until golden brown.

 Cool on baking sheet for two minutes or so. Then remove to a wire
 rack to finish cooking.

 Now you have about three dozen pumpkin cookies for Halloween!
