1-1/4 c Sugar
1 c Oil
3 Eggs
2 ts Lemon rind; grated
1/4 c Lemon juice
1-3/4 c Zucchini; shredded
2 c Flour
1/4 ts Baking powder
2 ts Soda
1 ts Salt
1 c Walnuts; chopped
Powdered sugar; sifted
Combine 1-1/4 cups sugar, oil, eggs, lemon rind, and lemon juice in
a large mixing bowl; mix well. Stir in zucchini.
Combine flour, baking powder, soda, and salt; gradually add to
zucchini mixture, stirring well. Stir in walnuts. Pour batter into
a greased 13x9x2" baking pan. Bake at 350 F for 45-50 minutes or
until a wooden pick inserted in center comes out clean. Cool; dust
top with sifted powdered sugar. Cut into bars.
