     Title: Lemon Chess Bars

     Yield: 1 servings

          Bottom layer:
     1 c  Butter
     2 c  All-purpose flour
   1/2 c  Confectioner's sugar
          Top layer:
     4    Eggs
     2 c  Sugar
     4 tb Flour
     6 tb Lemon juice
          Grated rind from 2 lemons

    Bottom:  Cream butter. Add flour and sugar. Mix well. Pat mixture into a
 pan (18x12). Bake at 325 degrees for 20 minutes.
    Top layer:  Beat together eggs, flour, sugar, lemon juice, and rind.
 Avoid overbeating. Pour over baked bottom layer. (It is not necessary to
 cool bottom layer.)   Bake at 325 degrees for 25 minutes. Cool on a wire
 rack. Sift confectioner's sugar over top. Cut into bars. These are worth
 the effort!!
