     Title: Crunchy Peanut Chocolate Squares

     Yield: 1 servings

          Crust:
    10    Chocolate-chocolate chip
          -cookies
   1/3 c  Melted butter
          Chocolate layers:
     3 c  Semisweet chocolate chips
          Peanut butter layers:
 1 1/2 c  Crunchy peanut butter
   1/2 c  Salted butter; softened
     3 c  Powdered sugar
     1 tb Vanilla extract

    Crust: Preheat oven to 325 degrees. Process cookies until finely ground
 crumbs in food processor. Add butter and mix together. Press crumb mixture
 into bottom of 8-inch square baking pan. Bake 10 minutes and cool to room
 temperature.
     Chocolate layers: Melt chocolate in double boiler. Pour 1/2 chocolate
 over cooled crust and smooth evenly. Chill and keep remaining chocolate
 warm over double boiler.
     Peanut butter filling: Blend peanut butter and butter together until
 smooth using electric mixer and slowly beat in powdered sugar. Add vanilla
 and beat until smooth. Spread peanut butter filling over chilled chocolate
 layer. Pour remaining warm chocolate over filling and spread smooth. Chill
 1 hour or until firm and cut into bars or squares.
