                         Chunky Chocolate Bars

  3      ounces        unsweetened chocolate
  8      tablespoons   butter  {1 stick} -- room temperature
  1      cup           sugar
  1      teaspoon      vanilla extract
  2      large         eggs -- room temperature
    1/2  cup           all-purpose flour
    1/2  cup           chopped walnuts

1. Melt the chocolate in the top of double boiler over simmering water. Cool
slightly.
2.  Preheat the oven to 350 degrees.  Lightly grease an 8-inch square pan with
butter or vegetable oil.
3.  Using an electric mixer on medium speed, cream the butter, sugar, and
vanilla in a medium-size mixing bowl until light and fluffy, 2 to 3 minutes.
Stop the mixer to scrape the bowl twice with a rubber spatula.
4. Add the chocolate and mix on medium speed until blended, about 8 seconds.
Scrape the bowl.
5.  Add the eggs and blend the mixture on high speed for 3 seconds. Scrape the
bowl, then mix on medium speed until the eggs are blended in, about 15
seconds. The batter will not be smooth.
6.  On low speed, add the flour and mix until it is almost incorporated.
Scrape the bowl. Add the nuts and mix until well blended, about 5 seconds.
Spread the batter evenly in the prepared pan.
7. Bake the bars on the center oven rack and bake for about 35 minutes, or
until toothpick inserted in center comes out clean. Place the pan on a rack to
cool completely before cutting.   Makes 12-16 bars.
