1/2 md Pineapple
1 c Water
2 Pkg gelatin
1 1/3 c Ricotta cheese
1 Cap vanilla extract
1 c Diet soda (Fresca, Lemon, Creme)
3 Pkg sweetener -- to taste
Boil the pineapple and water for 20 minutes. Blend soda and gelatin.
Add to cooked pineapple, chill until syrupy. Blend well. Add all
other ingredients and blend. Place in pie pan and refrigerate.
