     Title: Chocolate Zucchini Cake

     Yield: 1 servings

     1 c  Butter; melted
 1 3/4 c  Sugar
     2 lg Eggs
   1/2 c  Buttermilk
     1 ts Vanilla extract
 1 1/2 c  All-purpose flour
   1/3 c  Unsweetened cocoa
     1 ts Baking soda
   1/2 ts Baking powder
     1 ts Ground cinnamon
   1/2 ts Ground cloves
     2 c  Zucchini squash; shredded
   1/3 c  Semisweet chocolate chips

    Preheat oven to 325. Grease and flour a 9 by 13 inch
 baking pan. Beat butter until fluffy. Add sugar a little at
 a time, beat until light and fluffy. Add eggs, buttermilk
 and vanilla. Beat until well mixed. Whisk together in a
 bowl the flour, cocoa, soda, baking powder, cinnamon and
 cloves. Add flour mixture slowly to egg mixture. Beat until
 smooth. Stir in zucchini until well incorporated. Pour
 batter into pan. Sprinkle chocolate chips over top.
     Bake 40 minutes or until toothpick inserted into center
 comes out clean. Cool on wire rack. Serve cut into squares
 (this is a very moist cake because of the zucchini. It
 seems to hold the moisture).
