     Title: PISTACHIO CAKE

     Yield: 1 Servings

     1 pk Pistachio instant pudding
     1 pk Yellow cake mix
   1/2 ts Almond extract
     4    Eggs
 1 1/4 c  Water
   1/4 c  Oil
     7 dr Green food coloring
          Confectioner's sugar (opt)

 Combine all ingredients in large mixer bowl. Blend, the beat at medium
 speed for 4 minutes. Pour into greased and floured 13x9 inch pan. Bake at
 350 F for 45-50 minutes or until cake springs back when lightly pressed.
 Cool in pan 15 minutes. Remove and finish cooling on rack. Sprinkle with
 confectioner's sugar if desired.
