MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Tropical Carrot Cake

     Yield: 16 servings

     3 lg Eggs
   3/4 c  Canola oil
   3/4 c  Buttermilk
     2 c  A-P flour
     2 c  Sugar
     2 ts Baking soda
     2 ts Ground cinnamon
   1/2 ts Salt
     2 ts Vanilla extract
     2 c  Carrots; finely shredded
     1 c  Raisins
     8 oz Can crushed pineapple;
          - undrained
     1 c  Walnuts; chopped
     1 c  Sweetened shredded coconut

MMMMM--------------------------FROSTING-------------------------------
     8 oz Cream cheese; softened
 4 1/2 c  Confectioners' sugar
     2 tb Heavy whipping cream
     1 ts Vanilla extract

 In a large bowl, beat eggs, oil and buttermilk. Combine flour,
 sugar, baking soda, cinnamon and salt; add to egg mixture and mix
 well. Stir in vanilla, carrots, raisins, pineapple, walnuts and
 coconut; mix well. Pour into a greased 13x9" baking pan. Bake @
 350 F/175 C for 45-50 minutes or until cake tests done. Cool.

 For frosting, beat all ingredients in a bowl until smooth. Frost
 cake.
