Amount Measure Ingredient -- Preparation Method

1 c Sugar
1/2 c Canola oil (vegetable oil)
2 Eggs
1 ts Vanilla extract
3/4 c Self rising flour
1/2 ts Peppermint extract
1/2 c Walnuts or pecans -- chopped
6 tb Cocoa
Combine all ingredients in a large bowl and beat at medium speed of
an electric mixer until all of the ingredients are well blended.
Pour into a buttered and floured 8x8x2" baking pan. Bake on top
rack of a 325 degree F oven for 30 to 35 minutes, or until
toothpick inserted into center comes out clean. Allow to cool
completely before cutting.
Note: If using a glass baking dish reduce heat to 300 degrees F to
prevent burning.
