     Title: Zucchini Bread  Kh

     Yield: 1 Loaf

     2    Eggs
 1 3/4 c  Sugar
     2 ts Vanilla
   3/4 c  Oil
     3 c  Zucchini; grated
 2 1/2 c  Flour
 1 1/2 c  Wheat germ
 2 1/2 ts Baking powder
     1 ts Salt
     2 ts Cinnamon
     1 c  Nuts; chop

 Beat eggs until light and fluffy. Beat in sugar, vanilla, and oil.
 Stir in zucchini. Mix flour, wheat germ, baking powder, salt,
 cinnamon, and nuts. Gradually stir into egg mixture. Turn into
 2 greased loaf pans. Bake 1 hour at 350 degrees F.
