MMMMM----- Recipe via Meal-Master (tm) v8.01

     Title: Friar's Zucchini Bread
Categories: Breads, Vegetables
     Yield: 16 servings

     3    Eggs
     1 c  Oil
     2 c  Flour
   1/4 ts Baking powder
     2 c  Sugar, brown or white
     2 c  Zucchini, peeled and grated
     1 ts Salt
     3 ts Cinnamon
     3 ts Vanilla

 Beat eggs, oil, sugar and zucchini.  Sift dry ingredients together
 and add to mixture.  Add vanilla.  Pour into 2 greased and floured
 loaf pans. Bake at 350 degrees for 1 hour.  Test tops by touching
 with one finger before removing from oven.  Freezes excellent.
