     Title: Breakfast Cornbread

     2 tb Butter; melted
   3/4 c  Flour
   1/2 c  Cornmeal (yellow)
 1 1/2 ts Baking powder
   1/2 ts Salt
   1/3 ts Nutmeg
   1/2 c  Dried fruit bits (assorted)
     1 tb Sugar
     2    Eggs; separated
   1/2 c  Milk
   1/2 c  Corn
   3/4 c  Cheddar cheese; grated
     6    Pieces bacon; cooked and
          Crumbled

 Generously oil a 9" cast-iron skillet with butter and heat in 425 degree
 oven while mixing ingredients. Combine flour, cornmeal, baking powder,
 salt, nutmeg, fruit and sugar and set aside. In separate bowl, beat egg
 whites until peaks form and set aside. In medium bowl, blend milk, egg
 yolks, corn and cheese. Combine milk mixture with dry ingredients, then
 fold in egg whites. Remove hot pan from oven. Sprinkle bacon over bottom of
 pan, then spread dough mixture evenly on top. Bake at 425 degrees for 20
 minutes. Carefully turn out on serving platter. Serve warm with butter.
