How to bake grandma's galatopita (Mani, Lakonia, Greece)

Ingredients:
- 6 cups of milk
- 1 cup fine semolina
- 2/3 cup white sugar
- 4 large eggs
- 1 egg yolk
- 3 vanilla powder
- 1 cinnamon stick
- 50gr butter

Process:
I a pot, add all ingredients except the egg yolk and butter.
Continuously stir the mix over low heat for 7' to 10' until
it thickens and becomes cream.

When the mix thickens, remove from from heat. Take the
cinnamon stick out of the mix. Add the butter and keep stirring
to make a homogeneous thick cream.

Use a baking pan with tall rims. Apply butter on the baking
pan surfaces and sprinkle semolina over it. Pour the mix
into the baking pan.

In a small bowl whip the egg yolk with a little bit of water
and apply it over the cream with a brush.

Set the oven to baking (top and bottom heating elements), and
preheat at 180oC. Insert the pan in the oven and bake for 45',
until the pie gets a nice tan on top.

Before serving, add cinnamon powder and even sugar powder on top.
