Vegan Lahmajun

Ingredients

Dough

-   640 g plain flour
-   236 ml non-dairy milk
-   3 tsp salt
-   1 tsp sugar
-   2 tsp yeast
-   60 ml vegetable oil

Topping

-   453 g soy crumbles
-   1 red pepper
-   0.5 green pepper
-   0.5 medium onion
-   2 tomatoes
-   1 tbsp tomato paste
-   1 handful parsley
-   1.5 tsp cumin
-   2 tsp paprika
-   60 ml cup olive oil
-   Lemon wedges for garnish

Method

1.  Combine all dough ingredients into a dough
2.  Need for 5-7 minutes
3.  Cover lightly with oil and rise for 2 hours in a bowl covered in
   plastic
4.  Dice the peppers, tomatoes, onion, parsley
5.  Blend vegetables in food mixer with tomato paste, cumin, olive
   oil, paprika
6.  Add soy crumbles and mix
7.  Preheat oven to 200C
8.  Roll dough thinly and place on floured baking trey9. Cover with
   topping and bake until crispy, ~7 minutes
9.  Serve with lemon juice
