1. In a saucepan, cover the elderberries with water and bring to a
simmer
2. Simmer for 20 minutes
3. Strain the elderberries, save the juice
4. For every 240 ml of juice add: 200g of demerera sugar, 1 cinnamon
stick, juice from 1/4 of a lemon
5. Bring mixture to a boil
6. Boil for 15 minutes, stirring regularly, ensure all sugar is
dissolved
7. Remove cinnamon sticks
8. Let cool
9. Wash and oven dry some bottles
10. Put liquid in bottles
