- 6-8 leeks
- 1 tsp olive oil
- 3 thyme sprigs
- 2 bay leaves
- 125 ml white wine
- 1 garlic clove, skin on, bashed
- pinch brown sugar
- 200 ml water
Methods
1. Trim the tops and tails of the leeks, strip off outer layers
2. Cut down the length about 2/3 of the length, leaving the bottom
3. Add all ingredients to deep frying pan, season with salt and
pepper
4. Add leeks to the pan, simmer gently for ~15-20 minutes until very
tender
