Vegetable Ikra

Based on the recipe by Vadim Zeland (in Russian), but quantities are our own.

1 courgette
1/3 can tomatoes
1/2 capsicum
1 tsp salt
1/2 onion
2 cloves garlic
1 tsp chilli flakes

It also works well with eggplant instead of the courgette, and would probably
work well with a mix both too. Too much eggplant makes it bitter.

Chop the vegetables, then blend all ingredients smooth in a blender. If it
doesn't liquefy in the blender, add a small amount of water (or more juice from
the tomatoes).

Keeps well in the fridge.
