Fried (Red) Green Tomatoes

3 medium, firm tomatoes
1/2 tsp pepper
1/4 cup milk
2 eggs
vegetable oil

1. Slice unpeeled tomatoes into 1/2 inch disks.
  Sprinkle with pepper.

2. Beat together milk and eggs in a bowl.

3. Pour a shallow layer of breading into another bowl.

4. Heat 1/4 inch of oil in a frying pan, set to a medium/
  medium high heat.

5.  Dip tomato in milk and egg mixture, let the mixture
   mostly drip off.  Put tomato in breading, shake gently
   to ensure best coverage.  Flip and repeat shaking to
   cover other sides.  Repeat with the remaining slices,
   adding breading to bowl as necessary.

6.  Fry tomatoes.  Remove from the frying pan when breading
   is golden brown on both sides.
