RECIPE
3 lbs large diced cooked Yukon gold potatoes

FOR CHEESE SAUCE:
Add 1 quart of milk to pot and bring to a boil
Season with salt and white pepper
Mix 3 tablespoons of flour and 1/2 cup melted butter and add to hot milk mixture and cook until thickened

Add 1/2 cup cream cheese
1/2 cup pepper jack cheese
1/2 cup velvetta cheese
1/2 cup jack cheese
1 cup mild cheddar cheese
Add to thickened milk mixture and incorporate completely
Add cheese sauce,and bacon to cooked potatoes and pour in baking dish
Top with sharp cheddar cheese and melt in oven
