Spanakorizo is a Greek vegetarian dish of spinach and rice that may be eaten warm or cold.
It is often topped with a fried egg and served with feta cheese and lemon

Ingredients:

1/2 cup olive oil
2 medium, coarsely chopped onions
1 1/2 cups, long grain rice
2 1/2-3 cups water, or chicken stock
2 1/2 cups fresh, wilted and chopped spinach
Salt, to taste
1/2 cup chopped, fresh dill (optional)
1 cup Yogurt (optional)

Directions:
Add the olive oil to a deep, heavy skillet and heat over medium heat.
Add the chopped onions and saute until the onions are translucent.
Add the rice and saute for 1 minute with the onions and olive oil.

Set aside the rice mixture.
In a large pan, add the water or chicken stock and the spinach
and bring it to a boil over medium heat.
Stir in the rice and onion mixture after it begins to boil and add a pinch of salt.
Cover the pan and simmer the mixture over low heat for about 20 minutes,
or until the rice is cooked all the way through.

Turn the heat off and add the chopped dill, if desired.
Garnish each portion with some yogurt, if desired.
