Ingredients:
1/4 cup Greek olive oil
1 large onion, chopped
2 cloves chopped garlic
1 can cooked chickpeas, drained
1 1/2 cups uncooked rice
2 tablespoons tomato paste
3 cups water
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon ground cinnamon

Instructions:
Add the olive oil to a large saucepan and set the heat to medium.
Let the oil heat for a minute and then add the onions.
Saute for five minutes, or until the onions soften.
Add the garlic and cook for another 1-2 minutes.
Add chickpeas and rice and cook together for about two minutes.
Stir in the tomato paste and then the water and add the salt, pepper, and cinnamon.
Cover the pan and bring the mixture to a boil over medium-high heat.
Once the mixture boils, set the heat to low and cook until
all the water is absorbed and the rice becomes soft
