Ingredients:
1/2 cup Greek olive oil
1 large onion, chopped
1 stalk celery, chopped
1, 14 ounce can crush tomatos
1/2 cup tomato sauce
2 1/2 cups water
3 cups uncooked rice
Salt, to taste
Pepper, to taste
2 tablespoons chopped, fresh parsley
Instructions:
Pour the olive oil into a pot and heat on medium for a minute.
Add the onions and celery and saute until the onions are soft, about 8-10 minutes.
Stir in the crushed tomatoes, tomato sauce, water, rice, salt, and pepper and cover the pan.
Bring to a boil over medium heat and then reduce it to a simmer
on low heat until all the water is absorbed.
This should take about 15-20 minutes.
Stir in the parsley just before serving.
