Ingredients:
1 pound (16 ounces) pasta, any variety (spaghetti, linguini, etc)
1/3 cup Greek olive oil
4 tablespoons grated kefalotiri (Greek cheese) if you can't find, use romano
3 tablespoons chopped, fresh parsley

Instructions:
Prepare the spaghetti according to the directions on the package.
Cook the spaghetti to al dente, which means that it is cooked all the way through but still slightly firm.
Drain the spaghetti and transfer it to a serving dish.
Toss in the olive oil, cheese, and parsley and serve immediately.
