Recipe for Greek Style Lentils and Rice
This simple dish is made from rice and lentils, and is popular on islands like Crete. It tastes best when served with feta cheese or Greek yogurt

Ingredients:
1 cup dried lentils, rinsed
1 bay leaf
Water, for the pot
1/2 cup Greek olive oil
1 medium onion, chopped
2 1/2 cups chicken or vegetable stock
1 cup medium-grain rice
1/2 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1/2 cup chopped, fresh parsley

Instructions:
Add the lentils and bay leaf to a medium-sized pot. Stir in water so that the lentils are
covered by about 2 inches. Place the lid on the pot and bring the lentils to a boil over
medium-high. Drop the heat to low and simmer for about 20 minutes. Drain the lentils
