Ingredients:
6 medium red bell peppers
1 medium onion, chopped
Salt, to taste
Pepper, to taste
3 tablespoons red wine vinegar
1/4 cup Greek olive oil
1 teaspoon dried Greek Oregano
1 tablespoon chopped, fresh parsley to garnish.
Instructions:
Preheat the oven to 450 degrees Fahrenheit.
Place the peppers on a baking dish and bake for twenty minutes.
Peppers should wilt and become soft.
Peel the skin off and remove the seeds.
Cut the pepper into small pieces and add them to a medium bowl.
Add the onion, salt, pepper, vinegar, olive oil, and oregano
Stir gently with a wooden spoon.
Pour into a serving dish and sprinkle with parsley.
