STUFFED PEPPERS

Ingredients:
       4       large bell peppers (any color)
       1#      Italian sausage
       1       small onion
       2       garlic cloves
       1       14oz can diced tomatoes
       2t      Italian seasoning
       1c      cooked white rice
       1c      shredded mozzarella cheese (+ extra)
       4       basil leaves (garnish)

Prep:
       Bowl 1:
               garlic: mince (2 teaspoons)

       Bowl 2:
               tomatoes
               Italian seasoning

       Bowl 3:
               rice
               shredded mozzarella cheese

       Separate:
               sausage
               onion: chopped (1/2 cup)
               peppers: tops, seeds removed

Instructions:
 - Heat saute pan on medium-high 2-3 mins.
   Preheat oven to 350F.
 - Add sausage and onion, saute until
   sausage is browned and onion is glossy,
       8 mins.
 - Add BOWL 1, saute until fragrant, about
   3 mins.
 - Add BOWL 2, simmer for 5 mins.
 - Remove from heat, add BOWL 3, stir to
   combine.
 - Stuff peppers with sausage/rice/cheese
   mixture. Top with extra cheese. Garnish
       with basil if desired.
 - Bake until peppers are tender, about
   25-30 minutes.

Notes: Peppers will be tender but firm. For
 softer peppers, parboil for a few minutes
 before stuffing.
