SAUSAGE WITH ONION-APPLE GRAVY AND POTATOES

Ingredients:
   2   medium red onions
   1   large sweet apple (e.g. Honeycrisp)
   2T  unsalted butter
   4   Italian chicken sausage links
   2T  flour
   2T  brown sugar
   1t  brown sugar bourbon seasoning
   2c  no-salt-added chicken stock
   2T  balsalmic vinegar
   1   package microwave mashed potatoes
   1T  fresh sage

Prep:
   Bowl 1:
       onions: slice thinly

   Bowl 2:
       apple: grate
       flour
       brown sugar
       brown sugar bourbon seasoning

   Bowl 3:
       chicken stock
       vinegar

   Bowl 4:
       sage: chop finely

Steps:
 - Preheat large saute pan on medium,
   2-3 minutes.
 - Add butter and sausage to pan, turn
   occasionally until browned, 4-5 minutes.
   Remove from pan and set aside.
 - Add BOWL 1 to pan, stir occasionally
   until well-browned, 12-15 minuutes.
 - Add BOWL 2 to pan, cook 2 minutes.
 - Reduce heat to medium-low. Add BOWL 3 to
   pan. Return sausage to pan. Heat until
   simmering.
 - While stove is heating, prepare
   microwave potatoes according to package
   instructions.
 - Simmer, stirring often,  until sausage
   is fully cooked (165F) and sauce has
   thickened into gravy, 8-10 minutes.
 - Slice sausages. Divide potatoes into
   plated servings, top with sausage, and
   sprinkle with BOWL 4.
