MOLE-STYLE CHILI

Ingredients (4+ servings):
  1 tbsp olive oil
  1 cup diced yellow onions
  1 lb lean ground beef (93/7)
  1 pkg chili seasoning (1.25oz)
  1 tsp pumpkin pie spice
  1/4 c brown sugar
  2 15oz. cans low-sodium black beans
  2 tbsp tomato paste
  2 10oz. cans roasted tomatoes + chiles
  4 c beef stock
  2 oz dark chocolate (*)

(*) I use Ghiradelli 70% wafers

Prep:
       Bowl 1:
               ground beef
               chili seasoning
               pumpkin pie spice
               brown sugar

       Bowl 2:
               tomato paste
               tomatoes
               black beans: drained
               beef stock

       Bowl 3:
               chocolate: large pieces

Steps:
 - Heat large pot on medium-high 2-3 mins.
   Add oil and onion, cook until onion is
       tender, 3-4 minutes.
 - Add BOWL 1 to pot, stir to crumble meat,
   cook until browned, 4-5 minutes.
 - Add BOWL 2 to pot, stir in to combine.
   Bring to a boil, then reduce heat to low
       and simmer 30-60 minutes.
 - Add BOWL 3, stir to thicken, 4-5 mins.
